The Perfect (Healthy) Banana Pancakes

For the past few days, I’ve been working on perfecting my banana pancakes. More specifically, I’ve been perfecting a healthy pancake recipe I found on Blogilates. The original recipe had only two ingredients: bananas and eggs. While those pancakes were pretty good, I thought I could improve the recipe while still keeping it simple and healthy. Below, I’ve included the three recipes I tried. Don’t let me be the judge…which pancakes do you like the best? Let me know in the comments below.


Pancake Recipe 1: (From Blogilates)

Servings: 1

Time: 20-30 min

Ingredients:

  • 1 Banana
  • 1 Egg
  • Cinnamon (optional)

Step one: Mash the banana and the egg together and add the cinnamon

Step two: Cook like regular pancakes and top with agave syrup or enjoy plain!


Pancake Recipe 2:

Servings: 1

Time: 20-30 min

Ingredients:

  • 1 Banana
  • 1 Egg
  • 1 Tsp. Vanilla
  • 1/2 Tbsp. Agave Syrup (Plus additional for topping)
  • Pinch of salt

Step one: Mash all the ingredients together

Step two: Pour batter into small rounds on the skillet. Watch carefully to prevent burning and flip when bubbles form and pop. You may have to reshape pancakes with a spatula in the pan.

Step three: Top with agave syrup or berries and enjoy!

Note: these pancakes had the taste I wanted, but they were very runny and hard to cook. I decided I needed one more round of pancakes to get the recipe just right.


Pancake Recipe 3: (The good stuff!)

Servings: 1

Time: 20-30 min

Ingredients:

  • 1 Banana
  • 1 Egg
  • 1 Tsp. Vanilla
  • 1/2 Tbsp. Agave Syrup (Plus additional for topping)
  • Pinch of salt
  • 1/4 cup of oats

Step one: Put the oats into a food processor and pulse until they have formed a fine, flour like substance

Step two: Set the flour aside and mash all the wet ingredients together

Step three: Add the flour and mix. Let sit for a couple minutes to set

Step four: Pour batter into small rounds. As above, flip pancakes when they have formed bubbles that pop. These should be easier to cook.

Step five: Top with your chosen toppings and enjoy!

Note: These banana pancakes had the perfect balance of tastes and textures. Somewhat fluffy with an oatmeal-like texture, they are clearly a healthy option, but are still delicious.
