Quinoa Fried “Rice”

This quinoa fried “rice” has been a frequently requested recipe lately, and I’m excited to get it posted. Being stuck in our house day after day during this quarantine has given me the opportunity to cook even more than I usually do! I’ve been modifying old recipes, creating new ones, and making some old favorites.

I first made this recipe back in Oxford with Alex. We made it one night as a quick dinner in, using the more traditional rice as a base instead of quinoa. Later, I substituted quinoa when I was running low on ingredients and found I liked it even better. It’s been my go to dinner for a little while now, whenever I need something that requires very little time or resources.

It’s easy, healthy, and relatively simple. The best part about it is that you can use up any vegetables that are about to go bad, so it takes limited planning and can almost always be used as a last minute dinner option. I’ve included a list of ideas below for veggies you can use, but feel free to experiment or use whatever you have on hand.

I had to estimate the quantities of most of the ingredients, seeing as I usually throw this together based on what I already have cooked. You can play around with the ingredients as well. The important thing is that you don’t have more quinoa than you do vegetables. It’s better when the ratio is about 50/50 or even less of the quinoa.


Ingredients

Assorted veggies (about 3-4 cups chopped, ideas below)

2 cups of quinoa, cooked

3 Eggs

1/4 cup soy sauce (or less depending on your taste)

Ideas for veggies: carrots, peas, corn, onion, broccoli, celery, snap peas, baby corn, sweet potatoes


Fully cooked and ready to eat: Quinoa Fried "Rice"

Step one: Cook the quinoa (Boil 2 cups of water for every 1 cup of uncooked quinoa and add quinoa once water is boiling. The quinoa will absorb all the water).

Step two: While the quinoa is cooking, chop all of your veggies and place them in a large pan over medium heat with some olive oil. Stirring regularly, fry the veggies until they are completely cooked.

Step three: Add the cooked quinoa to the veggies and mix together.

Step four: Crack the eggs directly into the pan, stirring constantly until cooked. Once cooked, lower heat and add soy sauce.

Step five: Remove from burner and serve your quinoa fried “rice” with added soy sauce as desired!
