Simplified PB&J

My grandfather loves peanut butter and jelly so much that he’s got a PB&J shirt. It’s his favorite food, and I think I must’ve inherited his love for it. There’s nothing better than a good PB&J, but the normal version tends to be pretty sugary. I’ve always felt kind of gross after eating it, until I came up with this modified version of the classic! This recipe is super easy and simple for an exciting snack in the middle of the day or for breakfast on the go. It’s one of my favorites to make in my dorm, and it always feels like a treat!

Ingredients:

Two rice cakes the flavor of your choosing (I usually use plain brown rice for simplicity)

A handful of raspberries

2 Tbsp all natural almond butter

Simply spread the almond butter on your rice cake, mash some raspberries on top and enjoy!
