Homemade Gluten-Free Granola

Aside from almond butter, recently, my favorite thing to snack on has been granola. It’s so sweet and crunchy that I put it on everything! Specifically, I love adding a spoonful to my breakfasts in the morning. Honestly, it makes every meal a little bit better. Even a simple morning of Greek yogurt (my favorite brand is Siggis), some granola, and berries, can be incredibly delicious.

My favorite brand of gluten-free granola is Purely Elizabeth. I love trying the different textures and flavors, but even better than Purely Elizabeth is when I have a stash of homemade granola. Whenever I have access to a kitchen, I do my best to whip up a quick batch and throw it in a mason jar to eat during the week. Ingredients:

3 Cups of rolled gluten free oats

1 cup almonds, chopped

1/2 cup shredded coconut (optional)

1/2 cup of honey

2 Tsp melted coconut oil or butter

1 Tbsp cinnamon

1 Tsp vanilla extract

Instructions:

Preheat the oven to 350 degrees.

Mix the rolled oats, almonds and coconut together and then toast them on a baking sheet covered in parchment paper for 10-15 minutes.

Combine honey, coconut oil, cinnamon and vanilla.

After the oats are toasted, remove from oven and add in the honey mixture. Stir until well combined. Spread the mixture out on the baking sheet so it will cook evenly

Place the baking sheet back in the oven for about five minutes. After five minutes, turn off the oven but let the granola sit while the oven cools to finish toasting the mixture without burning. Remove from oven and let it cool completely. (The original recipe has you turn the oven off as soon as you put the mixture back in, but I always found I wanted my granola a little bit crisper, so I wait a couple minutes before turning the oven off.)

Add it to a yogurt bowl and enjoy!
